The Best Curried Egg Salad!

I have been eating this Curried Egg Salad since I was a little girl. I love it! My grandmother taught my mom how to make it and my mom taught me. My mom spent most of her childhood in the Australian Outback before moving back to the states as a teenager. It was while living in Australia that they learned how to make Curried Egg Salad.

So, today I’m going to share it with you. Why? Because it’s awesome and I know that you will love it!

The ingredients used in this recipe are very simple and you probably already have them on hand!

Ingredients:

1 Dozen Eggs

2/3 cup Healthy Homemade Mayonnaise (or to taste)

2 tsp Curry Powder (to taste)

Himalayan Pink Salt (to taste)

Pepper (to taste)

Super simple right? But trust me, it has phenomenal flavor!

Now, I do not use store bought mayonnaise. Frankly, store bought mayonnaise scares me! It is full of all kinds of nasty ingredients such as soy, canola, sugar, etc.

Instead, I make my own mayonnaise! It is super easy to do and it is really good! Not to mention it is very nutritious.

Ok, so let’s go ahead and dive right in to how to make Curried Egg Salad.

Directions:

1. You are going to start by hard boiling your eggs. They should be done after boiling for about 10-15 minutes. It will not hurt the eggs to boil a little longer though if you want to make sure:) After boiling, remove the eggs from your pot using a slotted spoon and allow to cool.

2. Once the eggs are cool you need to peel them and then rinse them off under cold water.

3. Next, using a handy dandy egg slicer, slice your eggs. Position your eggs on the slicer and slice. Then, holding the egg together, turn the egg and slice again from the opposite direction. Now you should have nice, uniform pieces of Egg!

4. Ok, now you are going to add your Healthy Homemade Mayonnaise and mix together until well combined. My recipe calls for 2/3 cup, but this really is just a matter of preference. If you want to use less, then add less. If you want more, then add more! I always go with a little more because it’s so tasty;)

5. After your mayo is incorporated, add the rest of your ingredients and mix again. The curry, salt and pepper are also according to taste. I really like the flavor of curry and sometimes add more than the recipe calls for. So start with a little and then keep adding until you are happy with the flavor.

Now the only thing left to do is to cover it and put it in the fridge to chill. That is, if you can keep from eating it all first;)

Ingredients

  • 1 Dozen Eggs
  • 2/3 Cup Homemade Mayonnaise Link to recipe is in the notes
  • 2 tsp. Curry Powder
  • Himalayan Pink Salt To taste
  • Pepper To taste

Instructions

  1. Hard boil the eggs. When done, remove from pot and allow to cool.
  2. Peel the eggs and rinse under cold water.
  3. Next, using an egg slicer, slice the eggs to small pieces.
  4. Add the mayonnaise and mix well
  5. Add remaining ingredients and mix until everything is incorporated evenly.
  6. Cover and refrigerate.
