Spelt and Honey Chocolate Chip Cookies!
Today I am going to share with you the chocolate chip cookie recipe that I created for my family.
My kids looove these cookies! And I’ll admit that I have a hard time staying out of them as well;)
However, I don’t feel that guilty because I know that these cookies are made using wholesome, nutritious ingredients.
My ten year old son is learning to bake and cook and he loves to make these cookies!
And another awesome thing about this recipe, is that it makes a lot of cookies! When you have a big family, you want lots of cookies!
The two shining stars in this recipe are Spelt flour and honey!
Spelt four contains more nutrients than modern wheat. It is an ancient grain that some consider to be the parent of wheat.
You can buy Spelt flour here. Or, you can do what I do and grind your own Spelt flour from whole Spelt berries.
I know, that sounds very difficult, but trust me it’s not! I have an awesome electric grain grinder that grinds a large container full of grain in literally just a few minutes.
This allows me to have fresh flour whenever I need it! Grinding your own flour before using it helps to prevent nutrient loss in the flour and ensures that your flour is as fresh as possible. Plus, I can buy my grain in bulk so that I have a constant supply of flour. Whole Spelt berries will literally last for decades! This is also a great idea for those who strive to be more self sufficient.

I strive to use all natural, unrefined sweeteners in all of my baking and cooking.
Honey is a favorite in my house. In this recipe it lends lots of moisture, making the cookies very soft and chewy! I prefer to use raw local honey. We use mostly orange blossom honey, as that is in great supply here in south Florida!
Eating local honey is thought to help decrease seasonal allergies. This is because the honey is made from the pollen that we are exposed to daily, helping us to become less sensitive to that pollen.
I also prefer to use organic chocolate chips as well:)

Spelt and Honey Chocolate Chip Cookies
- 2/3 Cup Grass-fed Butter Softened
- 1 Cup Raw Honey
- 2 Eggs Room temperature
- 2 tsp. Vanilla
- 4 Cups Spelt Flour
- 1 tsp. Baking Soda
- 1 tsp Pink Himalayan Salt
- 12 oz. Chocolate Chips
- Heat oven to 375 degrees.
- Mix butter, honey, eggs and vanilla thoroughly.
- Combine flour, baking soda and salt. Blend into wet ingredients.
- Mix in chocolate chips
- Drop rounded teaspoonfuls of dough about 2" apart on ungreased baking sheet.
- Bake 8-12 minutes, or until set and lightly browned.
- Cool slightly before removing from baking sheet.
