There are two kinds of pies that I crave as it gets closer to fall. Sweet potato pie and pecan pie!

But why just eat them in the form of pie?!

Instead of sweet potato pie, why not have Sweet Potato Pie Mashed Potatoes! And instead of pecan pie, why not have Pecan Pie Muffins!

Who says you can’t have sweet potato pie as a thanksgiving side dish?! And why can’t we have pecan pie for breakfast?!

Pecan Pie Muffins!

These muffins are my favorite muffins! I’ve been making them for years from a family recipe and we love them!

But, you know me, I always strive to make something as healthy as possible!

So, instead of making these muffins with regular store bought flour, I grind my own spelt flour. This might sound hard, but it’s not! And it’s sooo much better for you!

In addition to grinding my own spelt, I also sweeten these delicious muffins with coconut sugar!

I try to avoid refined sugars in my baking, and coconut sugar is an excellent sweetener to substitute regular sugar!

It makes the most amazing baked goods!

 

Pecan Pie Muffins!

These Pecan Pie Muffins are so moist and sweet, and have the wonderful flavor that you expect from pecan pie!

Pecan Pie Muffins

These Pecan Pie Muffins are so moist and sweet, and have the wonderful flavor that you expect from pecan pie!
Servings 9 Muffins

Ingredients

  • 1 Cup Chopped Pecans
  • 1 Cup Organic Coconut Sugar Firmly Packed
  • 1/2 Cup Organic Spelt Flour
  • 2 Large Eggs
  • 1/2 Cup Grass-fed Butter Melted

Instructions

  1. Preheat oven to 350 degrees. Combine first three ingredients and make a well in the center.
  2. Beat eggs until foamy
  3. Stir together eggs and melted butter. Make sure that your butter isn't too hot so that it doesn't cook the eggs!
  4. Add butter egg mixture to dry ingredients and mix until all ingredients are moistened.
  5. Add muffin liners to your muffin tins and fill 2/3 full with muffin batter.
  6. Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean. They should be golden brown.
  7. Remove from pan and allow to cool on wire racks.
