Homemade Healthy Mayonnaise!

Make Your Own Healthy Mayonnaise! It is soooo yummy! The texture is creamy smooth, and the color that the egg yolk and the mustard gives it is so beautiful!

Ingredients

  • 1 Cup olive oil Organic Extra Virgin (reserve 3/4 cup)
  • 1 Organic Fresh Egg (Preferably local or from your own free range chickens:)
  • 1 Tbsp. Apple Cider Vinegar
  • 1 Tbsp. Lemon Juice Organic, fresh
  • 1/2 tsp. Himalayan Pink Salt
  • 1 tsp. Dry Mustard Organic

Instructions

  1. First, add all of the ingredients (reserving 3/4 cup of the olive oil) to a blender or a mixing bowl. The recipe says to use a blender, but I always use a bowl and a hand mixer and it turns out beautifully.
  2. Starting on low, mix until all of the ingredients are incorporated. Then gradually increase the speed to be sure that everything is mixed really well.
  3. 3. While blending on med/high, slowly pour in the remaining 3/4 cup of olive oil. Continue to blend until all of the olive oil is incorporated and the mixture begins to slightly thicken. This should only take a few minutes.
  4. Then pour your mayonnaise into a glass jar and store it in the fridge. The mayonnaise will thicken as it chills.
