Pecan Pie Muffins
These Pecan Pie Muffins are so moist and sweet, and have the wonderful flavor that you expect from pecan pie!

Chopped Pecans

Organic Coconut Sugar
Firmly Packed

Organic Spelt Flour

Eggs

Cup
Grass-fed Butter
Melted

Preheat oven to 350 degrees. Combine first three ingredients and make a well in the center.

Beat eggs until foamy

Stir together eggs and melted butter. Make sure that your butter isn't too hot so that it doesn't cook the eggs!

Add butter egg mixture to dry ingredients and mix until all ingredients are moistened.

Add muffin liners to your muffin tins and fill 2/3 full with muffin batter.

Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean. They should be golden brown.

Remove from pan and allow to cool on wire racks.
